15 Best Vegetarian Cookbooks for Summer

As the heat of summer approaches, our palettes naturally begin to crave the deliciousness of fresh, crisp vegetables and healthy, soul-nourishing plant-based meals. We recently planted our veggie garden filled with tomatoes, peppers, broccoli, squash, zucchini, cucumber, lettuce and fresh herbs. And are so excited to watch them grow and enjoy each seasonal harvest. There is nothing better than enjoying the bounties of your labor, fresh out of your garden and onto your plate. 

Today I have gathered some great vegetarian cookbooks to help bring inspiration into your kitchen and all the yumminess into your mouth. Even if you’re not a vegetarian (like me) these cookbooks are all so delicious. The carnivore in you won’t even know what you’re missing!

Plenty

Chef, restaurant owner and British newspaper columnist, Yotam Ottoleghi uses his own Cordon Bleu training and mediterranean influence to share restaurant quality meals in a home friendly cookbook guide. Ottoleghi’s recipes include inspiring flavors, original combinations. And highlight the unique food cultures of London. Not a vegetarian himself, Ottoleghi’s recipes are both vegetarian and meat-eater friendly! Check Ottoleghi out on instagram for more inspiration and recipes.

The Moosewood Cookbook: 40th Anniversary Edition

Written by Mollie Katzen and inspired by recipes from The Moosewood Restaurant co-op in Ithaca, New York, this cookbook staple is a beloved compilation of simple, healthy, and seasonal foods to inspire a love and joy in plant-based home cooking. 

The Love and Lemons Cookbook

Jeanine Donofrio and her husband Jack live in Chicago with their two Shiba pups who help clean kale stems off their kitchen floor. Jeanine creates inventive vegetarian recipes for every meal and believes healthy eating is all about balance. She incorporates plant-based basics like quinoa, rice and lentils. And she doesn’t skimp on dessert either. Check out Jeanine’s website and instagram for recipes that are just as delicious as they are beautiful.

The Sustainable Kitchen

Written by two Vermonters, Heather Wolfe and Jaynie McCloskey, The Sustainable Kitchen cookbook is a guide for not only cooking plant-based meals, but living a planet-conscious lifestyle by using local, seasonal foods, decreasing food waste, conserving energy and limiting processed and refined foods. Using their own knowledge and wisdom in dietician, design, holistic nutrition, homesteading and scratch cooking Wolfe and McCloskey have compiled a beautiful guide to nourishing, nutritional, and delicious meals.

The Korean Vegan Cookbook

The Korean Vegan cookbook written by Joanne Lee Molinaro is so much more than a cookbook. Molinaro weaves stories of love, family and food together. She shares a compilation of Korean recipes both traditional and reimagined that shaped her families story and her own identity.

The First Mess Cookbook

Featuring whole-food, vegan, seasonal recipes, Laura Wright’s, The First Mess Cookbook is Wright’s offerings of her favorite meals for any time of the day. Wright uses her own experiences growing up in her families food market and having access to fully stocked root cellars with fresh seasonal produce. Laura later went on to attend culinary school and was encouraged by her friends to share all of her “delicious, no-fuss, healthy, seasonal meals”.

Cook’s Vegetables Illustrated

Brought to you by America’s Test Kitchen, Cook’s Vegetables Illustrated has over 700 kitchen-tested recipes with everything from artichokes to zucchini. Honestly, whether you love vegetables or not, this cookbook will make you fall in love with cooking and also eating veggies. The recipes are so easy to follow and sure to please.

    Anything by Heidi Swanson is amazing, she has several cookbooks and her website 101cookbooks.com. I also really enjoy Ruffage by Abra Berens which is plant focused but has recipes for vegetarians and omnivores alike!

  7. I love my own cookbook. Not because it is the most sensational or beautiful. I am not a teacher, a chef or a writer. I am a retired mother who worked with children and saw a huge need to get children to love veggies. They can! I have written a fun, informative children’s vegetable cookbook that address seasoning, and texture. The cookbook is interactive, inviting the young chef to make observations and changes if necessary. It is best suited for children 3-12 years with a dozen pre-reader recipe charts. I believe the whole family will enjoy the book…and learn something they didn’t know before! Dare.
