Fresh Strawberry Mint Mojitos

Give us all the strawberries. These beauties are in season and I’ve been eating them fresh, slicing them into my yogurt in the morning, throwing them in cakes, making strawberry crisp—basically anywhere I can get away with using them. Thankfully, we have Sweet Berry Farm which has been feeding my addiction. I’ve decided to extend my strawberry obsession to cocktails this holiday weekend and this strawberry mint mojito cocktail recipe is pretty and refreshing. Like summer in a glass. Cheers to the long weekend.

The perfect summer cocktail recipe with strawberries and mint

Ingredients:

simple syrup*
mint
strawberries
lime juice
rum
club soda
crushed ice
*Simple syrup is easy to make. Mix equal parts sugar and water together and heat in a saucepan on low until combined. Using different types of sugars result in different tastes.
1. Muddle four fresh strawberries and ten mint leaves together with a half ounce of simple syrup. Add more sugar after the drink is complete if you want. That’s the beauty of simple syrup. It combines more easily than just sugar.
2. Mix in an ounce of lime juice and two ounces of rum. Add in a handful of crushed ice and top with club soda.
3. Adjust to your tastes, adding more simple syrup if needed. Garnish the glass with mint leaves and sliced strawberries.
